Grilled chicken is one of the easiest things for me to use up because of how versatile it can be. Most of the time grilled chicken has just a few seasonings and it stays moist even after you have packed it in the refrigerator.
For those of you looking for the healthiest option to use up the chicken then you will want to make a salad with it. Now there are two types of salad you can do with it, so which one you do is totally up to you. The first one is a simple salad with lettuce, a variety of toppings like cucumbers, tomatoes, and olives. Then you cut the grilled chicken in strips or cubes and put it on top of the salad.
The other salad is just like the first except instead of cut the chicken and topping the salad, you shred the chicken. Put the shredded chicken in a bowl and add some ranch dressing to it, pepper, salt, and some olives. Stir until well blended and top your salad with it. You can also put this mixture on bread if you prefer.
If you are looking to use this chicken with a simple snack then you have a few options. First you can cut it into cubes and serve it with cubed cheese. You can also cut it or shred it and serve it on tortillas with a little bbq sauce. Or you can use it with some cheese and make a nice after-school quesadilla.
My son also had a hard time getting enough iron so I used to feed him leftover chicken that I would cut into strips for him.
