My husband and I love ham so we always buy a few extra around the holidays when it’s cheap. So we are always in need of some good ham leftover recipes. And with both of us working it’s nice to have quick recipes that we can get to the dinner table in a jiffy.
In looking for some quick ham leftover recipes I came across this one with very few ingredients and looked to be rather easy, so my family tried it. My husband loved it, but he loves corn bread. I, on the other hand only tolerate corn bread and so this was good but certainly not my favorite.
Easy Leftover Ham
2c ham, cut small cubes
1 Tbsp green onion, thinly sliced
1½ c Mozzarella cheese, shredded
1 8.5 oz pkg corn muffin mix
Grease a 9 in pie plate and then sprinkle the ham, onion and half the cheese in it. Make the corn muffin mix batter according to package.. Pour the muffin mix over the ham and then sprinkle the top with the remaining cheese. Bake at 350 for 20 minutes or until the corn bread is light brown.
Not all ham leftover recipes are as easy as the last one, but this one can still be done in under 30 minutes. In order to have it done that quickly my husband and I will normally prep the veggies the night before.
Ham, Eggs and Vegetables
4 c ham, cut into thin strips
1 Tbsp vegetable oil
2 c carrots, sliced very thin
2 c fresh broccoli florets
1 cup frozen green peas
2 cups French cut green beans
1 c red bell peppers, sliced
1 c green bell peppers, sliced
1 onion, sliced
2 eggs, lightly beaten
1 Tbsp soy sauce
½ c water
1 tsp cornstarch
In a large skillet or wok heat the oil over medium heat. Then place the carrots, broccoli, peas, green beans, peppers and onion into the skillet. Cover and let simmer for 15 minutes.
Place the ham in the center of the vegetables and stir just to moisten. Simmer another 5-10 minutes.
In a small skillet, scramble the eggs just until firm but still moist. Cut the eggs into little pieces and add to the ham and veggies.
In a small bowl mix the soy sauce, water and cornstarch and pour into the skillet. Stir quickly until it thickens. Serve over rice.
