These left over chicken recipes will have you getting up for second and thirds.
The first of the left over chicken recipes is a Low-Fat version of chicken Alfredo that I make when my mother comes over.
Leftover Chicken Alfredo
2 c chicken, chopped or shredded
2 tsp butter
4 garlic cloves, minced
½ c minced onions
2 c fat free half-n-half
1-2 tsp flour
½ tsp salt
¼ tsp pepper
½ c Parmeson cheese, grated
8 c fettuccine, coooked (about 1 lb uncooked
In a large skillet melt the butter over medium high heat. Then saute the garlic and onions until tender. Add the chicken and saute for 3 minutes or until fully heated. Remove from pan and set aside.
In the same pan add the cream heat for a minute, then slowly add the flour and mix gently until smooth. Add the chicken, garlic and onoins back to the pan along with the salt and pepper. Cook for 1 minute constantly stiriing until thoroughly heated. Slowly add 1/3 c cheese over the mix, continuing to stir for 1-2 minutes. Remove from heat and combine the chicken with the pasta in a large bowl. Serve by adding just a little of the remaining cheese on each plate.
The last of the left over chicekn recipes is a sort of a Chinese inspired casserole.
Leftover Chicken with Noodles
2½ c chicken, diced
1 c celery, chopped
¼ c onion, chopped
2 Tbsp butter
2 cans cream of celery soup
¼ c evaporated milk
½ c slivered almonds
1 can Chinese Noodles
In a large pan melt the butter; then brown the celery and onions over medium heat. Add the chicken, soup, almonds, and milk and cook until fully heated. Place half the chicken mix in a pan, then spread the noodles out evenly and finally top with the remaining chicken mix. Bake for 30 minutes at 350.
