Left Over Chicken Pot Pies and Hot Dishes

If you need to use up that left over chicken then these three recipes will be a tasty and easy way to do it.

This first left over chicken recipe is a tasty hot dish that tastes great served over noodles or rice.

Left Over Chicken Hot Dish
1-2 c left over chicken, cut into pieces
1 can mushrooms
1 pt sour cream
1 can cream of mushroom soup
1 c chicken broth
1 pkg dressing mix (onion, ranch, or your favorite)

Place the mushrooms and chicken in a greased 9×13 pan.  In a medium bowl mix the sour cream, soup and broth together.  Pour over the chicken.  Make the dressing according to the directions and spread over the chicken.  Bake for 30-40 minutes at 350.

Both of these next left over chicken recipes are different types of pot pies.  Both of tehm have their own strengths and my family enjoys them both for different recipes.  Take a look at them and then try them both if they both look good.

Left Over Chicken and Veggie Pie
2-3 c chicken, chopped
1 can green peas
1 can cream of chicken soup
1 c left over chicken broth
1 1/3 c self rising flour
1 1/3 c milk
2 heaping Tbsp of butter

Combine the chicken, peas, soup and broth in a bowl.  Salt and pepper it to taste and then pour into a casserole dish.  In a separate bowl combine the flour, milk, and butter, then pour the batter over the chicken mix.  Bake in preheated oven (375) for 40 minutes or until the pie crust is fully cooked.

Left Over Chicken Pot Pie
2 c left over chicken, cut into pieces
3 carrots, cubed
4 potatoes, cubed
2 c frozen peas
1 can cream of chicken soup
1 can cream of celery soup
2 pie crust, 9 inch

Boil the potatoes and carrots together for 30 minutes then drain and keep in warm pan.  Add the chicken and peas and stir together.  Next add the soups and stir until well blended.  Place one of the crusts into a pie plate and then pour the chicken mix inside, you will probably want to use a deep dish pie plate as there is a lot of filling.  Then place the second crust on top and pinch the edges together.  Make 3-4 slits on top and bake at 350 for 1 hour.
