Left Over Ham Recipe For the Kids and More

I a left over ham recipe that is really easy and quick to make.  My husband and I didn’t much like it but our kids just loved it.  I also found a great ham pie recipe that we all enjoyed.

This left over ham recipe is the one that my kids really enjoyed.  I’ve now made it 3 times, I think it makes a really good lunch for them and there is usually enough leftovers for another day or two.

Mac& Cheese Ham Casserole
1 pkg Mac and Cheese
¾-1 c diced ham
½ c celery, sliced
¼ c onion, diced
1 can cream of mushroom soup
½ c milk
Bread crumbs or Cracker crumbs

Prepare the mac and cheese according to the package.  While that’s cooking combine the ham, celery, onion, soup and milk in a large mixing bowl.  Once the mac and cheese is done allow it to cool for a few minutes and then add it to the bowl and mix well.  Pour the mixture into a casserole dish or baking pan and top with bread or cracker crumbs.  Bake at 350 for 30 minutes.

This left over ham recipe is really simple to make.  You can also add more vegetables with the ham to make it more of a pot pie if you choose.  If you also want to make it up ahead of time you can refrigerate it for up to 3 days or you can also freeze it for 3-6 months.

Left Over Ham Pie
2 ½ c ham, cubed
¼ c butter
¼ c flour
½ tsp salt
¼ tsp ground mustard
1/8 tsp pepper
1 c milk
1 tsp onion, minced and dried
2 hard cooked eggs, chopped
1 c frozen peas
Pastry for single crust pie

In a medium sauce pan over medium heat melt the butter.  Then slowly stir in the flour, salt, mustard and pepper until smooth.  Add the milk and onion slowly, stirring frequently.  Bring to a boil over medium high heat, and let cook until thickened.  Add the ham, eggs and peas then remove from in.  Pour the ham mix into an 8” square pan or something similar in size.  Put the pastry on top and cut a few slits in it.  Bake for 25 minutes at 425.  The crust should be gold and the filling bubbling underneath.
