Left over turkey recipes are most needed after Thanksgiving, but if you are like me then you need them all year round. For this reason I tried these two leftover recipes and they were delicious.
This first of the two left over turkey recipes is a turkey bake with noodles, mushrooms, and peas. My family certainly enjoyed it and I hope yours does as well.
Left Over Turkey Bake
4 c turkey cubed
1/3 c butter
¼ c flour
1 Tbsp garlic, minced
1/8 tsp pepper
1¾ tsp salt
3 ½ c milk, warmed
20 oz chicken or poultry gravy
2 c elbow macaroni, cooked
2 4oz cans of mushrooms, drained
1 can early June peas
2 oz pimento, diced and drained
¼ c butter, melted
1 c breadcrumbs
½ tsp parsley
Melt the 1/3 cup butter in a large saucepan. Add the flour, garlic, pepper and salt and mix until well blended. Next add all the milk and stir until bubbly and thickened. Add the chicken gravy and stir until smooth. Then add the turkey, macaroni, mushrooms, peas and pimento.
Preheat the oven to 350.
Grease a 13×9 inch cake pan and pour the turkey-noodle mix into it. Cover with foil and bake for 30 minutes. Combine the bread crumbs and melted butter in a bowl. Remove casserole from oven and discard foil. Sprinkle the bread crumbs on top then the parsley. Bake an additional 10 minutes and serve.
The second of the two left over turkey recipes is a turkey sandwich that is just to die for.
Left Over Turkey Sandwich
2 c leftover turkey
½ c mayo
2 Tbsp cranberry sauce
¼ c red onion
½-1 dill, fresh or dried
1 tomato, thinly sliced
1 small box of sprouts
2 pita
Shred the turkey in a grinder or food processor until desired consistency is reached (I like mine finely diced.) Place the turkey in a mixing bowl and add the mayo, cranberry sauce, onion, and dill; mix until well combined.
Open up the pita bread and place enough tomatoes and sprouts to your liking. Then top with some turkey mix and enjoy.
