If you are busy like me then you need quick and simple leftover beef recipes. Well, I have found that they exist and can taste great. Which is why I’m going to share these three with you.
The first two leftover beef recipes are casseroles. Both can be made ahead of time and then you can cook it when you are ready, or even cook it before hand and just heat it up the day you want it.
Potato Beef Casserole
2 c roast beef, cubed or diced
1 med onion, thinly sliced
2 c potatoes, cubed
½ c wter
½ c tomato sauce
¼ c green pepper, chopped
1 Tbsp Worcestershire sauce
Salt
In a medium mixing bowl combine the water, tomato sauce, pepper, Worcestershire sauce and a bit of salt; set this aside. In a 1-qt casserole dish arrange the beef at the bottom and then lay the onions and potatoes evenly on top. Then pour the sauce you just made over the top and cover. Bake for 45 minutes at 350 or until potatoes are soft.
Leftover beef Casserole
1 ½ c beef, cubed
½ c onion, thinly sliced and slightly sautéed
1 can celery of mushroom soup
1/3 c milk
3 c potatoes, sliced
¾ c cheddar cheese, shredded
In a medium bowl combine the beef, onion, soup and milk. Then in a casserole dish place a layer of potatoes followed by some soup mix, then another layer of potatoes, soup and on until it is all used. Top with cheese and bake at 350 for 1.5-2 hours.
The last of the three leftover beef recipes is another simple casserole that uses peas and carrots instead of potatoes.
Roast Beef Casserole
2 c leftover roast beef, diced
1 c gravy (try to use leftover or fresh for better flavor)
1 medium onion, diced
3-4 carrots, thinly sliced
16 oz peas, defrosted
1/3 c cheddar cheese, grated or shredded
In a medium bowl combine everything but the cheese until well blended. Pour in a casserole dish and sprinkle the top with cheese. Bake at 350 for 30-35 minutes and serve.
