Leftover Chicken Recipes For Easy Casseroles

Some of my favorite leftover chicken recipes are casserole recipes.  Casseroles are a fantastic thing to make because they provide a full meal in one dish without much effort.

Leftover Chicken Casserole
Leftover chicken
4 potatoes, peeled and sliced
3 onions, sliced
1 can of peas, drained
1 can of mushroom soup
1 can milk

In a casserole dish put a layer of potatoes down followed by a layer of onions. Then sprinkle a layer of peas and some chicken.  Do this until the dish is about ¾ full.  Combine the soup and milk in a small bowl and pour it over the casserole.  Bake at 350 for 45-60 minutes or until the potatoes are soft.

This second leftover chicken recipes has celery in it rather then potatoes, but I have added cubed potato pieces before and it taste good.

Chicken Casserole
3 c chicken, cut small
1 c celery, chopped
1 can cream of mushroom or chicken soup
¾ c mayonnaise
2 Tbsp lemon juice
¾ tsp salt
½ tsp pepper
1 jar pimentos, diced
Potato chips, crushed

In a large mixing bowl combine all the ingredients except the chips.  Once well blended pour into a casserole dish and top with the chips.  Bake for 30 minutes or until the chips have started browning at 350.  This goes well served on it’s own or over noodles, or rice.

The last of the leftover chicken recipes is a very simple casserole but it doesn’t offer any vegetables so is best served with a salad or another veggie.

Easy Leftover Chicken Noodle Casserole
1 c leftover chicken
½ bag big flat noodles, cooked
1 can cream of chicken or mushroom soup
1 onion
Parsley, Salt and pepper to taste

Combine the chicken, noodles, soup and ¾ the onion sliced in a mixing bowl.  Pour into a casserole dish and top with the rest of the onion chopped.  Sprinkle the seasonings to taste.  Bake for 30 minutes at 350.
