My family always needs a good leftover ham recipe after we do ham. Even though there is four of us and I get the smallest ham there are always plenty of leftovers.
The first leftover ham recipe is a ham loaf with a wonderful glaze.
Ham loaf
1½ lbs cooked ham, ground or cubed very finely.
1 c milk
1 c rolled oats
2 eggs, beaten
1/8 tsp ground cloves
1 tsp dry mustard
2/3 c brown sugar
¼ vinegar
3 Tbsp water
In a bowl mix the first 6 ingredients until completely blended. Then shape it into a loaf and place in a 13×9 cake pan. Slightly score the top with any pattern you like.
Bake in preheated oven at 350 for 30 minutes.
While ham is baking combine the other 3 ingredients in a saucepan. Over medium heat let the glaze boil and then cook for 5 minutes, stirring frequently.
Remove pan from oven and apply a coating of glaze. Return the loaf to the oven and continue to bake for about 30 minutes, basting often.
This next leftover ham recipe combines pinto beans, and ham with bbq sauce to make a tasty ham and baked bean concoction.
Leftover Ham and Baked Beans
1 c cooked ham, cubed
2 c pinto beans, uncooked
2 Tbsp bacon drippings
¼ c green bell pepper, chopped
1 c sliced onions
¼ c molasses
½ c ketchup
1½ tsp Worcestershire sauce
1 Tbsp vinegar
1½ tsp dried mustard
1 tsp salt
Cook the beans in water until tender. Drain the water but reserve ½ c of the juice and set aside. In a skillet over medium heat melt the bacon drippings if necessary and then add the green pepper and onion. Cook for 5 minutes. In a 2 qt casserole dish spread the pintos evenly at the bottom. Then spread the onions and peppers and lastly top it with the ham. In a small mixing bowl combine the remaining ingredients and pour over the ham. Bake at 325 for an hour.
