Quick Leftover Ham Recipes

Are you looking for leftover ham recipes that won’t keep you in the kitchen all day?  How about a leftover ham recipe for a casserole or corn-bread pie.
This first leftover ham recipe is a wonderful casserole that shouldn’t take more then 20-25 minutes to prep and about an hour to cook.  I love this recipe on a day where I don’t want to be in the kitchen much.

Ham Casserole
6 Potatoes, sliced
3 Tbsp Butter
3 Tbsp Flour
Salt and Pepper to taste
2 c milk
2 c or 8 oz of Cheese, grated or cubed (Colby Jack or Monterey Jack taste delicious with this)
1 c of leftover ham, cubed
1 c bread crumbs
2 Tbsp melted butter

Put the potato slices in a medium pan with enough water to cover.  Put on high heat and allow to boil for 30 seconds.  Then remove from heat and drain water.  The potatoes should still be quiet firm.  Lay the potatoes in a greased casserole dish.

In another pan melt the 3 Tbsp of butter over low-medium heat.  Then add the salt, pepper and flour, stirring continuously.  Let thicken, about 2-3 minutes, then add milk and cheese and ham; turn heat up.  When that comes to a rolling boil, pour over the potatoes.

Then take the 2 Tbsp of butter and mix it in with the bread crumbs.  Then sprinkle this over the casserole and bake at 350 for about an hour.

Corn-Bread Ham Pie
2 c. ham, cibed
1 1/2 c Mozzarella Cheese
1 Tbsp green onion, sliced thinly
1 8 oz pkg of corn bread mix

Grease a 9-inch pie plate or casserole dish.  Then mix the ham, onion and about half the cheese in it.

In a mixing bowl prepare the corn bread per package instructions.

Then pour the corn bread batter over the ham and bake at 350 for 15-20 minutes.
