Leftover Pork Recipes That Will Have Plates Cleared in Minutes

Did you have pork last night?  So did I.  Did your family finish all of it or do you have leftovers?  If you have leftovers you might want leftover pork recipes and I have some for you that will get your family to eat it all up.

Whatever type of pork you have you can use it for this recipe you just need to cut it.

Stir-Fry Leftover Pork

1/2-1 lb leftover pork

1 c teriyaki marinade

Cut the pork in as thin of strips as you can and place them in the a bowl or dish then pour the marinade over the meat, if a cup doesn’t cover the meat then add enough to completely cover the pork.  Then let marinade for at least 4 hours but overnight is a lot better.

2 c cooked rice

1 pkg frozen stir-fry veggies

1 can water chestnuts cut into strips

1/2 can of bean sprouts

Pull out the pork and put it into a medium to large skillet and cook with 1-2 Tbsp of extra virgin olive oil.  Once it is done then add another tablespoon of oil and add all the vegetables.  I also add a little of the teriyaki marinade to give it more flavor.  Fry for about 15-20 minutes over medium heat.  If you want to make a teriyaki dip or sauce then you can take teh marinade and add a little flour.  I will often make this to pour over the rice.

For the rice I normally have it cooked the night before or just use leftover rice.  if I don’t have any leftover rice and didn’t make some the night before then I make it up fresh but since it takes so long I try to avoid that.

When ready to serve it works really well if you put the place the rice on the plate and push it flat.  Then top it with some of the meat-veggie mix and top with some of the sauce.
