Leftover Pork Roast Recipes

Leftover pork roast recipes are all over the place.  Some of them are easy, some of them are hard; here I’m going to show you some that are easy and should take but a few minutes to throw together.

I think the easiest leftover pork roast recipes of all time is the pulled pork sandwich.  All you need to do is cook in your crock pot overnight in water to make it nice and tender.  Then pull it out, shred it throw it back in with some BBQ sauce for an hour or two, just until it’s warm.  Then you place on a bun, deli roll, or your choice of bread.  Serve some mashed potatoes and carrots with it for dinner or French fries and grapes for lunch.

Another of many simple leftover pork roast recipes is the fajita.  Just slice the roast into thin strips and add it to some slices of onions and peppers and sauté it until the onions are soft, serve it on tortillas with sour cream and cheese.

How about a nice sweet and sour pork recipe with your leftovers.  Just cut the meat into bite size pieces add some onions, bell peppers, and slivers of carrots, and cook with sweet and sour sauce for 10-15 minutes.  Then serve it over rice.  Or better yet serve it with a fried rice.

One of my favorite easy leftover pork roast recipes is something I call the easy breezy stew.  I throw the leftover pork in the crock pot and add 2-3 cans of veggies (potatoes, corn, carrots, green beans, just NOT peas, they will get mushy.)  Then I add some frozen veggies if I have some like broccoli, peas or corn.  Then I cook on low for 4-5 hours and dinner is done.  I love it because making it is easy and the clean up is just as easy.
