Leftover potato recipes are hard to find, right?

Wrong, I have some right here.  Potatoes are a major staple in the American household, in fact my family has them at least 3 times a week.  But what do you do when you make too much.  These potato recipes and ideas will be sure to please even the pickiest of eaters.

First of all the baked potato, what to do with it?  This on is by far the easiest to deal with, next time you have mashed potatoes just scoop out the innards and add it to the mashed potatoes.  Don’t like mashed potatoes?  Well, your crazy, but in that case you can also cut it into cubes and add it to soups and stews.  When doing this add it at the end because it doesn’t need to cook anymore, it just needs to heat up a bit.

We then move on to the mashed potato, loved by all.  My family loves mashed potatoes and I always seem to make 2-3 potatoes too many and if I try to do less then I seem not to have enough, so I always have leftovers.  Well, I hate to just get rid of them so what do I do?  I make a yummy, yummy casserole.  It is really simple.

1-2 C cooked chicken cubed or shredded (you can even use leftover chicken and do double duty here.)
Milk
2 Bouillon cubes
Mashed potatoes
Veggie of your choice.

First I spray a pan and lay the chicken flat in the pan.  Next I heat about 1/4c milk and add the bouillon cubes over medium heat.  Then I add the milk mixture to the potatoes and stir.  Then add enough milk to potatoes to make a honey consistency.  Pour that over the chicken and top with choice of vegetables.  Cook at 350 for 35-40 minutes.  And enjoy a wonderful meal full of leftovers.
