Leftover Roast Beef Recipe

If you had a nice big roast last night then you are probably on the hunt for a tasty leftover roast beef recipe.  Well stop the hunt because here I would like to share with you a beef fried rice recipe and a delightful beef ragout recipe, both of which use leftover roast.
Chinese food…mmmmmmm…that’s about all I need to say here.  I love it and when I found this great leftover roast beef recipe for fried rice I just had to try it.  And no surprise to us we greatly enjoyed it.

Beef Fried Rice
2 c Shredded cooked beef
2 Tbsp soy sauce
2 sp cornstarch
½ tsp sugar
3 tsp dry sherry
1 lg onion, sliced
6 Tbsp oil
2 green peppers, sliced
¼ c chicken or beef broth
4 c cooked rice
Salt and pepper to taste

In a small bowl combine the meat, 1 Tbsp soy sauce, cornstarch, sugar and sherry.  Let this marinate for 15-20 minutes.

While that is marinating sauté the onion in 2 Tbsp of oil for 3 minutes, in a large skillet.  Then add the green pepper and sauté for another minute.  Then add the meat, marinate, broth, and leftover soy sauce and sauté for 1-2 minutes until all is nicely heated.

Put the meat mixture into a bowl and set aside.  In the skillet heat the remaining 4 Tbsp of oil and then add the rice.  Fry the rice for 3-4 minutes or until slightly brown and then add the meat.  Serve and enjoy.

This last leftover roast beef recipe is a ragout, if you don’t know what that is don’t worry neither did I.  I still don’t know exactly what it is but it’s common in France and it is a type of meat and veggie dish that in my opinion tastes great.

Leftover Beef Ragout
2 c roast beef, cubed
1½ c onions, sliced
3 Tbsp butter
1 bouillon cube
1½ c water
¾ tsp salt
1 lemon slice
12 prunes
2 c carrots, sliced
2 cups potatoes, diced (best to leave skins on)
1 Tbsp cornstarch

In a large skillet melt the butter and add the onion.  Sauté the onion until tender and then add remaining ingredients excluding the cornstarch.  Cover and let simmer for 20 minutes.  Just before the 20 minutes is up mix the cornstarch with ¼ c water and add to the pan.  Simmer for another 5-10 minutes and then serve.
