I always purchase large roast so I always need some good leftover beef recipes to finish off what we don’t eat. Plus my family hates always eating the same things over and over so I needed a variety of leftover beef recipes. That is where these three come in handy.
Leftover Roast Beef Mix
1 c roast beef, finely chopped
½ c celery, diced
½ c Cheddar, Swiss or Monterey Jack cheese, diced
¼ c mayonnaise
2 tsp sweet pickle relish
½ tsp horseradish (leave out for less of a kick)
2 Tbsp ketchup
¼ tsp salt
Pepper to taste
In a medium mixing bowl combine the ingredients together. This goes really well served on top of lettuce, as a sandwich, in a pita pocket, or on a tortilla. This recipe does not work well frozen, so don’t make more then you’ll use.
Leftover Roast Beef Dinner
4 thin slices of roast beef
1 c beef or brown gravy
Rolls, Bread, Rice, or Mashed potatoes
Place the roll, bread, or whatever you want on a plate then arrange the beef on top of it. Lastly pour the gravy over the beef and enjoy. This usually serves 1 adult or 2 children.
This next leftover roast beef recipes is a fairly uncomplicated beef fajita that normally only takes 25-30 minutes to do.
Leftover Roast Beef Fajitas
1 lb leftover roast beef
1 bell pepper, chopped
1 tomato, chopped
1 onion, chopped
Salsa or hot sauce
8 Tortillas
Oil
Sauté your pepper and onion until tender. While that is coking cut your leftover roast into thin strips and set aside. When the pepper and onion are done add the meat, tomato and continue cooking for about 15-20 minutes. Warm the tortillas in the microwave or oven and then scoop some of the meat mix into the center. Top with a little salsa and roll the tortilla. Enjoy.
