Leftover Steak Recipe

Are looking for a good leftover steak recipe?  Then you have come to the perfect place.  Since I will be sharing a beef and broccoli stir fry and a potato beef mix; both recipes using leftover steak.

The first leftover steak recipe is the potato beef mix, it’s a very simple recipe that works really well for lunch; just add a salad and you will have a filling, well balanced meal.

Beef and Potato
½ c leftover steak, chopped
½ onion, chopped
1 green tomato, chopped
1-2 potatoes, cubed
Malted Vinger to taste
Red Wine Vinegar to taste
Salad dressing or sour cream

In a medium skillet fry the potatoes and onion in 1-2 Tbsp butter or oil.  Once the potatoes are brown add the tomato.  Once the tomato is hot add the steak and vinegars.  Stir until well heated.  Serve on plate with choice of salad dressing or sour cream on top.

The next leftover steak recipe is a beef and broccoli stir fry.  This goes really well over rice, lo main noodles, or for a more American approach serve it over sliced potatoes that have been sautéed in a bit of oil.

Beef and Broccoli
1 lb leftover beef, cut in strips
2 Tbsp Soy sauce
1 Tbsp cornstarch
5 Tbsp Oil
1 garlic clove, minced
¼ c onion, chopped
¼ tsp crushed red pepper
½ c sliced mushrooms
2 c broccoli floweret
½ c carrots, cut into strips
½ c beef broth

Combine the soy sauce and cornstarch in a bowl and then add the beef, turning to coat.  Cover and refrigerate for at least 4 hours, but overnight is best.

Heat 2 Tbsp of oil in a large skillet or wok over medium to high heat.  Then add the garlic, onion and red pepper, frying for 2 minutes.  Then remove this from the skillet with slotted spoon and put in large bowl; set aside.

In the skillet stir fry the mushrooms for 1 minute, then add to large bowl.

Add another 2 Tbsp of oil and once heated stir fry the broccoli and carrots until tender crisp, usually about 2 minutes.  Then remove and add to bowl.

Add the remaining Tbsp of oil.  Then remove the beef from the marinade, set the marinade aside, and put the beef in the skillet.  Stir fry for about 2-3 minutes and then add the broth and marinade.

Stirring constantly bring to a boil and let boil for 1 minutes.  Add the vegetables and cook for a few minutes until everything is fully heated.  Serve over your choice of rice, noodles or potato.
