My husband and I are really excited to be doing our first Thanksgiving together this year. In fact, we are so excited we actually plan to make too much because we love all the leftover recipes that you can do with turkey. We even plan on buying 4 turkeys, one to cook now, and 3 for later in the year, because you can never get them cheaper then now. There is only six of us but we will be purchasing turkeys that are 18+ pounds which are meant to feed 12-16, but we want the leftovers and now I will continue to share what we do with the leftovers.
I love the turkey sandwiches that come after the holiday it can be something really simple like a little mayo and some turkey or I may get really into it a make a gourmet sandwich. If I have everything then I put a layer of pureed yams (you can usually mash them with a fork) then on the other side I put jellied cranberry sauce, on top of that I put some stuffing, then sprinkle a few olives, then I pile on some turkey and close it up. This sandwich is very versatile if you don’t have stuffing then leave it out, no yams, than none needed, or do you have mashed potatoes use the instead, anything you want can go on it.
Also if you want something a little lighter after that heavy Thanksgiving dinner, then why not a salad. You can prepare some salad greens then top it with some cranberry sauce and turkey, you can also use yams but I only enjoy it in the salad if they were made with marshmallows. You can also sprinkle some cheese or add croutons and dressing to finish it off.
Now I know not everyone does turkey for thanksgiving some people do ham, well guess what both of these can be considered leftover ham recipes if you prefer that. Or you can make a ham and bean soup.
