These recipes for leftover turkey are both casseroles with rice in them. I love casseroles that have rice because rice is so filling, healthy and incredibly inexpensive.
Both of these recipes for leftover turkey are easy but this one is a tad bit more time consuming. Still this turkey and ice casserole shouldn’t take more then 50 minutes from start to finish.
Turkey and Rice Casserole
2-3 c turkey, diced
2 c cooked rice
1 Tbsp butter
1 Tbsp olive oil
¼ c celery, finely chopped
¼ c onion, finely chopped
1 c frozen peas, thawed
1 c milk
1 can cheddar cheese soup
1 tsp mustard
½ tsp salt
½ c soft bread crumbs, tossed with enough melted butter to be moist
In a large skillet heat the oil and butter together; then sauté the celery and onion until tender. In a large mixing bowl combine the sautéed onion and celery with the cooked rice, peas, milk, soup, mustard and salt. Pour into a 2 qt casserole dish and top with the buttery breadcrumbs. Bake at 350 until heated through, normally 35-40 minutes.
This is the easier of the recipes for leftover turkey and you should be done from start to finish in less then 40 minutes.
2½-3 c cooked rice
2 c turkey, diced
¼ Tbsp onion, finely chopped
1 tsp curry powder
6 pimiento stuffed olives, sliced
1 can cream of mushroom soup
½ c milk
½ c Cheddar Cheese, grated or Shredded
¼ c cornflake or rice krispie crumbs
In a mixing bowl combine the rice, onion and curry powder. Once well mixed place into a baking dish. Sprinkle the turkey and olives over the rice mix. In a bowl mix the soup and milk together and then pour over the turkey. Sprinkle the tope with cheese and crumbs. Bake for 30 minutes at 350 and enjoy.
