Recipes For Leftover Beef

Both of these recipes for leftover beef are a casserole type meal that you’re family will absolutely love.

This first recipe helps to combat the dryness of leftover beef by using gravy to keep it moist and has a really good cheesy flavor that you should really enjoy.

Peas, Carrots, and Beef
2 c roast beef cut in small cubes
1 c gravy
16 oz peas, thawed
3 carrots
1 onion
1/3 c cheddar cheese

Combine everything but the cheese.  Then pour in casserole dish and top with the cheese.  If you want to give it more flavor you can add some Parmesan cheese as well.  Then bake for about 35 minutes and 350 and enjoy.

This next recipes for leftover beef takes a bit more prep time but is well worth the time since it is delicious.

Chow Mein Beef Casserole
3 Stalks of Celery
1 onion
1 green pepper
2 c beef
2 Tbsp Butter
1 can of mushroom soup
1/2 c water
Salt and pepper to taste
1 3oz can of Chow Mein Noodles

The celery, onion and pepper needs to be cut into chunks and the leftover roast into cubes.  In a skillet add 1 Tbsp butter and the roast, cook until heated and put in medium casserole dish.  Then add the other Tbsp of butter and the veggies to the pan.  Cook until veggies are getting soft, then remove from heat.

Mix in the remaining ingredients NOT including the noodles.  Stir and then pour over the beef.  Cover with foil and bake at 325 for 30 minutes.  Pull out, remove foil and add the noodles on top.  Then bake another 10-15 minutes.

Both of these casseroles should feed 4-5 people.  If you would like it to stretch a little more you can add more vegetables and also serve bread with it.  You could also start with a salad and then you could get 6-7 servings if need be.
