Recipes For Leftovers Using Ham

With Christmas coming up I know I will have leftover ham, and I love it.  I want to share some recipes for leftovers that will incorporate that leftover ham so you won’t have to waste it and you won’t have to make endless amounts of sandwiches.Not that sandwiches are bad but after eating ham sandwiches for 2 or 3 days it can sure become boring.

This first recipe my whole family loves and it has almost become sort of an after Christmas tradition.

Corny Ham Casserole
2 1/2 c Ham
1 c cream of mushroom soup
16 oz of sour cream
2 eggs
1 bag of frozen veggies
1 c cheese of choice
2 c of Cheddar and/or Mozzarella cheese
2 pieces of cornbread (leftovers work great)
3/4 c butter (1 1/2 stick)

Grease a 9×13 dish with spray or shortening.  Then in a bowl combine the ham, soup and sour cream.  In another bowl whisk the eggs and then add them to the ham mix.  Then add the veggies and cup of cheese and blend well.

Pour the ham mix in your cake pan and top with the 2 cups of cheese, DO NOT stir, you want a nice layer of cheese here.

Then in a saucepan melt the butter.  Once melted add the cornbread and stir just until moist.  Sprinkle this mix over the cheese.

Bake for an hour at 350.   You want the top to be nice and brown , because it will taste best if crispy.

Most of the recipes for leftovers that I use I enjoy, sometimes even more then the original.  However the leftover recipe is not one of my favorites.  I’m choosing to share it because my husband and kids love it and you might as well.  I just don’t personally like the pineapple with it.

Pineapple Ham dinner
2 c ham
2 Tbsp of butter
1 pkg wild rice and long grain rice with seasoning packet
2 cans of pineapple chunks

IN a medium skillet melt the butter.  Add the rice and ham and let brown.  The drain the juice from the pineapple and add enough water to make 2 1/2 c then add it to the rice and ham.  Add the seasoning packet and let boil.  Once boiling cover and reduce to simmer.  Cook for about 20 minutes.  Then add the pineapple chunks and serve.
