I’m sure most of you reading this eat chicken, and probably more often then any other meat because of how cheap it is. That is why most of us are in need of recipes using leftover chicken so we don’t have to waste it each month.
This first recipe using leftover chicken I want to share is really great but it can use any type of leftover poultry, so chicken or turkey will work great.
Chicken A’la Casserole
2 c leftover Chicken
2 c celery, coarsely chopped
1 can of water chestnuts
16 oz frozen peas
1 can cream of chicken soup
1-2 Tbsp pimiento
Chow Mein Noodles (YUM!!)
You can skip this first step and just mix the ingredients together, but I like to do it since it seems to taste a little better and cook more evenly.
In a medium skillet cook the chicken, celery, chestnuts, and peas together with a dab of butter. You want to cook it until the celery starts to become a little soft. Then pull off heat and combine rest of ingredients.
Pour chicken mix in a casserole dish or cake pan and bake for 45 minutes at 350. Pull out and top with the noodles and bake an additional 15 minutes.
This goes really well with biscuits or rolls and using bread can really help it stretch if needed.
My husband will not eat this next recipe because of the tomatoes, but I will normally make it for lunch and eat the leftovers for a few days.
Garden Chicken
2 tomatoes, sliced
1 onion, sliced thinly
Cornmeal or bread crumbs
4 slices of Cheese (I usually use a white one, ie Swiss, Mozzarella, etc.)
Leftover chicken, cubed
2 c Broccoli, almost pureed in blender or food processor
Preheat the oven to 400. Then grease a 9×9 pan with butter, shortening, oil, or spray.
Arrange the tomatoes on the bottom neatly. Next lay out the onions. Then sprinkle some corn meal or bread crumbs, I often use Italian bread crumbs. Next place the cheese on top of that. You have now created a very wonderful Cheesy-Garden crust that you can use for other recipes but we will continue with this one.
Then cover the crust with chicken. I then sprinkle some more bread crumbs or corn meal but it is not necessary. Spread the pureed broccoli over the chicken and cover with foil.
Bake for about an hour and serve.
