Leftover Turkey Recipes; Part 1

Thanksgiving is just around the corner so most of us are busy with planning meals, trying to convince Aunt Freeda that cousin Sally doesn’t hate her and she can come to Thanksgiving.  Or trying to get a seating arrangment that won’t offend Uncle George, or Great-grandma Smith.  Or you could be like me and wanting to start your own family traditions so you are busily convincing both sides of the family that you love them dearly but now that you have 4 kids you just want to have a dinner at home and not worry about traveling 10 hours with the 4 kids in the back seat.  So with all this planning and talking you probably have also started buying the food and let’s face it, you got a turkey that is huge, 5 cans of jellied cranberry sauce, 8 cans of olives and 2-3 x more then what you really need for a family of 6, but that’s okay I will show you what to do so all that food won’t go to waste. Everyone is feeling the economic strain that is upon and so far there doesn’t seem to be an end in site.  So now more then ever we need to tighten or budget and reduce our waste.  Well nothing can reduce wasted money like using those leftovers rather then throwing them in the garbage.  Most Americans waste 2-3 meals worth each week, can you imagine that.   Studies show that you normally spend $2 a meal per person so that means for a family of four that would be $24 a week or close to $100 a month that you are throwing away.  So what do you do with all the leftovers in order to make them tasty again.  What leftover recipes can we use to turn that roast from Sunday into a delectable meal again, or the leftover baked potato still sitting in the foil, well look no further here I will be giving my expertise on using up those leftovers so you can save that $100+ each month. Need leftover recipes; how about PIZZA!!!!

Are you looking to get rid of all those leftovers?  Do you need a quick and simple way to celan out your fridge but you don’t want to just throw it all away?  Well then I have the perfect solution for you; PIZZA!!!!!   Yes, you heard me right, pizza, the all-time favorite Friday night dinner.  All you need to do is make or purchase pizza dough, roll it out and started adding the leftovers, sweet and sour chicken, beef stir fry, spaghetti, or whatever you have eaten over the last few days.

You think I’m crazy, don’t you?  Well did you know that they way we make pizza is nothing like what true Italian pizza was like?  Did you also know that pizza really was meant for leftovers?  It was, pizza the way it was meant to be was to be had sometime in mid-week and you would just pile on whatever leftover were in the fridge sprinkle a little cheese and bake.  It wasn’t until it came to American that pizza came to be how we now know it.  So why don’t you at least give this crazy thought a try and you might be pleasantly surprised.

Of course, you can go wrong with this crazy concept, your pizza may be soggy or too heavy, so there are some simple rules to follow.

1. Do not put too many toppings.  I always first put my layer of sauce and then add 1-2 nights of leftovers.

2. Do not put anything wet or soggy on the pizza.  So last nights stew would not be a good idea to use.  I have used gravy instead of pizza sauce and it works really well.

3.  Don’t combine foods that won’t taste good together.  I’m sure you don’t want to eat peanut butter chicken, or potato refried beans, but how about trying sweet and sour chicken with a little cheese.  Better yet forget the pizza sauce and just through some sphagetti and meatballs on with some mozerrella.

Remember getting rid of those leftovers will be easy with this simple pizza leftover recipe.
